Sometimes it can be so common for us to see the picturesque tejuino vendor on a corner that we forget the historical and symbolic value of this very special drink.
Tejuino is made from the fermentation of corn through a malting process where the corn is germinated with water and added piloncillo. This type of fermentation makes tejuino a very popular type of corn beer in central Mexico, especially in Jalisco. Today it is made just as it was several centuries ago when this fresh drink was drunk in rituals and celebrations.

Make Your Own Tejuino
Ingredients:
1 kg of corn dough
1 kg of piloncillo
3 liters of water
Lemon and salt to taste
crushed ice to taste
Preparation:
Boil piloncillo in water until the piloncillo melts. In another container, mix the dough with water until it becomes a thick liquid and add it to the boiling water. Once the consistency of an atole has been achieved, the drink should be allowed to ferment for two to three days, preferably in a traditional clay container covered with a cloth napkin. After the fermentation process the drink is ready to be served and enjoyed to taste.
